How can I recover a deleted memo?

If you delete a memo it goes in the trashcan. Press the "+" button then choose "Import from trashcan" to retrieve a file from it.

If you backup your iOS device to your computer and a backup was done before the memo was deleted (and no new backup has been done), you can try to extract the memo from the backup. Search the web for "iTunes backup extractor" for details.
